Strawberries & Cream + Overnight Oats Smoothie

This vegan smoothie recipe is an amazingly well-balanced meal for breakfast, and it only takes 10 minutes to prepare! First, take five minutes in the evening to prepare the overnight oats. Then, just five more minutes in the morning to make the strawberries and cream smoothie.  Yes, it is that simple!

In addition, it is also an easy recipe to adjust according to what you have on hand. For example, you can sub apple sauce for bananas (as a natural sweetener), or you can sub any frozen berry for the strawberries in the smoothie, and so forth. This recipe is simple and quick, which allows you to mix up the flavors according to what you have available, or what you are craving. The result is a quick, delicious, and healthy breakfast.

OVERNIGHT OATS
  1. 1 banana
  2. 1/2 cup oats
  3. 3 tbsp chia seeds
  4. 1 cup non-dairy milk
  5. 1/2 tsp ceylon cinnamon
  6. 1/4 tsp vanilla
  7. STRAWBERRIES & CREAM
  8. 1 cup strawberries, frozen
  9. 1/2 cup non-dairy milk
  10. TOPPINGS (optional)
  11. Fresh berries, almond butter, nuts, seeds, raisins, mint, etc
Instructions
  1. EVENING PREP: Mash banana in a medium sized bowl. Add oats, chia seeds and mix until well combined. Next, add non-dairy milk, ensuring all ingredients are covered (sometimes the chia seeds like to stick to the side of the bowl)! Cover and refrigerate overnight.
  2. MORNING PREP: Combine frozen strawberries and non-dairy milk in a blender, and blend until smooth and creamy. Place half of the overnight oats in a glass and top with half of the strawberries and cream. Repeat for second serving.
