Mint Lime Dressing

Okay... I am not going to lie... this recipe surprised me. I had this mint salsa the other day, and it sparked some serious curiosity. I was doing some experimentation with dressings using mint and this came out so freaking good. Then again, it is hard to go wrong with mint.

Did you know mint is considered a weed? Yep... that also means it is super easy to grow. Everyone should plant some in their backyard. Seriously, go and plant some now. Then, make this recipe and tell me what you think. My best description of this combination is refreshing and tangy. It compliments so many thing; salads, wraps, and especially bowls!

Ingredients
  1. 1/2 avocado
  2. 1 lime, juiced
  3. 3 tbsp olive oil
  4. 1 tbsp rice vinegar
  5. 1/4 cup mint, loosely packed
Instructions
  1. Combine all ingredients in a food processor and blend until smooth! Enjoy!
