Zesty Vegan Ceviche

This is a great zesty appetizer to pair with lunch or dinner. Think of the vegetable version of ceviche... YUM! Also, if you feel like getting creative, this dish is perfect for stacking to impress all of your friends. So, get creative, get your hands dirty, and have a little fun. I mean, if you want to.

Ingredients
  1. 1 cup quinoa
  2. 2 cups water
  3. 2 cups zucchini, chopped
  4. 1 cup tomatoes, chopped
  5. 3 limes, juiced
  6. 1/4 cup cilantro, chopped
  7. 1 jalapeno
  8. 1 tbsp olive oil
  9. 1 avocado, chopped
  10. salt to taste
Instructions
  1. Combine 2 cups of water and quinoa in a medium pot. Bring to a vigorous boil and then simmer, covered, until quinoa is tender and white spiral-like grains appear around each grain (about 15 minutes).
  2. While the quinoa is cooking, chop your zucchini, tomato, avocado, jalapeno, and cilantro and set aside.
  3. Once quinoa is cooked, add all ingredients into a large mixing bowl, and slowly fold together. Make sure not to mash the ingredients together.
  4. Serve and enjoy!
