Meatless Meatloaf

Guys, meatloaf. Meatless meatloaf! Vegan, gluten-free, and dairy-free, as always! So, fun fact... I love recreating classic dishes [if you haven't already noticed with my pizza, mac & cheese, quiche, and other recipes]! There is just something so homey and comforting about the classics. Reminds me of the good old days -- family dinners, good conversation, good food, and just all around fun times. It brings really good memories and makes me feel all warm and fuzzy inside!

A big reason why I to truly believe that changing my diet in the past [to a healthier version] was extremely difficult, was because I always felt limited, deprived, and bored. Salad, again? Great. NO... I craved those yummy classic dishes, like all. the. time.

I didn't realize at the time eating healthy didn't have to be bland and boring. All it takes is challenging yourself to get in the kitchen more and test recipes. Let the creative juices flow, you know? That is ultimately how I created my meatless meatloaf. Yes, meatless meatloaf. I know it's not technically a meatloaf if it doesn't have meat, but it sure tastes like one. Actually, better IMO. Go ahead, try it.

Ingredients
  1. 1 bell pepper
  2. 2 carrots
  3. 1 cup celery (~4 stalks)
  4. 1 cup oats, ground
  5. 2.5 cups soybeans, cooked (can sub chickpeas for soy free)
  6. 1/2 cup tomato sauce
  7. 3/4 cup nutritional yeast
  8. 1 tbsp parsley
  9. 1 tbsp basil
  10. 1 tsp salt
  11. 1 tsp pepper
  12. 1 6oz can tomato paste
Instructions
  1. Prep: Preheat oven to 350 degrees. Finely chop bell pepper, carrots, and celery. Set aside. Using a food processor, blend oats until finely ground.
  2. Prepare: In a large mixing bowl, mash soybeans. You don't need this to look like a puree, just ensure that all beans are mashed together (I use a potato masher or my hand for this step). Once mashed, add in chopped bell pepper, carrots, celery, ground oats, tomato sauce, nutritional yeast, and spices. Mix until well combined.
  3. Bake In a lightly greased meatloaf pan, spoon in mixture. You want to ensure everything is tightly packed, so firmly press down and create a flat top. Spread the tomato paste in a nice layer on top of the mixture. Now, bake for 30-40 minutes. Serve and enjoy!
